Description

Delicious and nutritious zucchini boats filled with shredded chicken, veggies, and marinara sauce.


Ingredients

  • 4 medium zucchinis, halved lengthwise
  • 1 pound ground chicken (or shredded cooked chicken)
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • Optional: red pepper flakes, fresh basil for garnish

Instructions

  1. Preheat the oven to 375°F (190°C). Prepare zucchinis by cutting them in half lengthwise and scooping out the centers.
  2. Heat a drizzle of olive oil in a skillet over medium heat. Add diced onions and sauté until soft, about 5-7 minutes. Stir in the shredded chicken, marinara sauce, Italian seasoning, salt, and pepper. Mix well.
  3. Fill each zucchini boat with the chicken mixture and top with mozzarella cheese.
  4. Bake for 25-30 minutes, until zucchinis are tender and cheese is bubbly and golden. Cool slightly before serving.

Notes

Serve with fresh herbs for garnishing. Great as a main or a hearty snack.
