Delicious and nutritious zucchini boats filled with shredded chicken, veggies, and marinara sauce.
Ingredients

- 4 medium zucchinis, halved lengthwise
- 1 pound ground chicken (or shredded cooked chicken)
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon Italian seasoning
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- ¼ cup grated Parmesan cheese
- Optional: red pepper flakes, fresh basil for garnish
Instructions
- Preheat the oven to 375°F (190°C). Prepare zucchinis by cutting them in half lengthwise and scooping out the centers.
- Heat a drizzle of olive oil in a skillet over medium heat. Add diced onions and sauté until soft, about 5-7 minutes. Stir in the shredded chicken, marinara sauce, Italian seasoning, salt, and pepper. Mix well.
- Fill each zucchini boat with the chicken mixture and top with mozzarella cheese.
- Bake for 25-30 minutes, until zucchinis are tender and cheese is bubbly and golden. Cool slightly before serving.
Notes
Serve with fresh herbs for garnishing. Great as a main or a hearty snack.
