Description

A delightful twist on the classic strawberry shortcake, these streusel bars combine crumbly textures with fresh strawberries for a sweet and tangy treat.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, softened
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups fresh strawberries, hulled and chopped
  • 1 tablespoon lemon juice
  • 1/4 cup powdered sugar (for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking pan.
  2. Mix together the flour, granulated sugar, brown sugar, baking powder, baking soda, and salt until well combined.
  3. Cut in the softened butter until crumbly. Then, add the egg and vanilla extract, mixing until a dough forms.
  4. Press about two-thirds of the dough into the bottom of the prepared pan evenly.
  5. Toss the chopped strawberries with lemon juice and spread over the crust in the pan.
  6. Crumble the remaining dough over the strawberries ensuring even coverage.
  7. Bake for 30-35 minutes or until golden brown.
  8. Let the bars cool completely in the pan and dust with powdered sugar before slicing.
