- 4 medium zucchinis, sliced
- 1 pound Italian sausage, casings removed
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup bell peppers, chopped
- 2 cups marinara sauce
- 1 teaspoon Italian seasoning
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
- Olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- Heat olive oil over medium heat and sauté the onion and garlic until translucent.
- Add the Italian sausage to the skillet, breaking it up as it cooks until browned.
- Stir in the sliced zucchini and bell peppers, and cook for about 5 minutes until slightly softened.
- Pour in the marinara sauce and add Italian seasoning, salt, and pepper. Mix well.
- Transfer the mixture to a greased casserole dish.
- Top with mozzarella and Parmesan cheese.
- Bake in the preheated oven for 25-30 minutes until the cheese is bubbly and golden.
- Let it cool for a few minutes before serving. Enjoy!
Notes
For added crunch, sprinkle breadcrumbs on top before baking. Prepare a day in advance for easier meal prep.
