Description

A comforting dish combining zucchini, Italian sausage, and melty cheese for a hearty meal perfect for any gathering.


Ingredients

  • 4 medium zucchinis, sliced
  • 1 pound Italian sausage, casings removed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup bell peppers, chopped
  • 2 cups marinara sauce
  • 1 teaspoon Italian seasoning
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat olive oil over medium heat and sauté the onion and garlic until translucent.
  3. Add the Italian sausage to the skillet, breaking it up as it cooks until browned.
  4. Stir in the sliced zucchini and bell peppers, and cook for about 5 minutes until slightly softened.
  5. Pour in the marinara sauce and add Italian seasoning, salt, and pepper. Mix well.
  6. Transfer the mixture to a greased casserole dish.
  7. Top with mozzarella and Parmesan cheese.
  8. Bake in the preheated oven for 25-30 minutes until the cheese is bubbly and golden.
  9. Let it cool for a few minutes before serving. Enjoy!

Notes

For added crunch, sprinkle breadcrumbs on top before baking. Prepare a day in advance for easier meal prep.
