Description

A vibrant and delicious pasta salad with fresh vegetables, tangy feta cheese, and a zesty lemon herb dressing. Perfect for warm weather gatherings.


Ingredients

  • 8 oz pasta (e.g., penne or rotini)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, finely chopped
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions. Drain the pasta and let it cool completely.
  2. Combine the cooled pasta, cherry tomatoes, cucumber, red onion, Kalamata olives, feta cheese, and fresh parsley in a large bowl.
  3. Whisk together the olive oil, lemon juice, oregano, salt, and pepper in a small bowl.
  4. Pour the dressing over the pasta salad and toss gently until all ingredients are evenly coated. Chill in the refrigerator for at least 30 minutes before serving.

Notes

Serve chilled for best flavor. Can be made ahead and stored in the refrigerator for up to 3 days.
