Description

A delicious twist on classic drunken noodles, combining Italian flavors with fresh vegetables and aromatic basil, perfect for a quick weeknight dinner.


Ingredients

  • 8 oz wide rice noodles
  • 2 tablespoons vegetable oil
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 bell pepper, sliced
  • 1 zucchini, sliced
  • 2 cups spinach
  • 1/4 cup soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon chili paste
  • Fresh basil for garnish

Instructions

  1. Cook the rice noodles according to package instructions; drain and set aside.
  2. Heat vegetable oil over medium heat in a large pan.
  3. Add onion and garlic, and sauté until fragrant. Then, add bell pepper and zucchini, cooking until tender.
  4. Stir in the cooked noodles, spinach, soy sauce, oyster sauce, and chili paste. Toss everything together until well combined and heated through.
  5. Serve hot, garnished with fresh basil.
