Description

A comforting, protein-packed bake with cottage cheese, zucchini, and bell peppers, topped with a golden crust.


Ingredients

  • 2 cups cottage cheese
  • 1 cup chopped spinach
  • 1 cup diced bell peppers
  • 1 cup chopped zucchini
  • 1/2 cup chopped onion
  • 2 eggs
  • 1 cup shredded cheese (e.g., mozzarella or cheddar)
  • 1 cup breadcrumbs
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning

Instructions

  1. Preheat the oven to 375°F (190°C). Grease a medium baking dish.
  2. In a large bowl, mix cottage cheese, spinach, bell peppers, zucchini, onion, and garlic powder until evenly combined.
  3. In another bowl, beat the eggs and mix in the Italian seasoning, salt, and pepper. Pour into the vegetable mixture and stir.
  4. Fold in shredded cheese and breadcrumbs.
  5. Pour mixture into the baking dish and spread evenly. Bake for 30–35 minutes until golden.
  6. Let cool for 5-10 minutes before slicing and serving.

Notes
