- 1 pound ground turkey
- 2 medium zucchinis, sliced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can diced tomatoes (14.5 oz)
- 1 cup shredded cheese (mozzarella or cheddar)
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Olive oil
Instructions
- Preheat oven to 350°F (175°C).
- Heat olive oil in a large skillet over medium heat. Add onion and garlic, sauté until fragrant.
- Add ground turkey to the skillet and cook until browned.
- Stir in zucchini, diced tomatoes, Italian seasoning, salt, and pepper; cook for another 5-7 minutes.
- Transfer the mixture to a baking dish and sprinkle cheese on top.
- Bake for 25-30 minutes or until cheese is bubbly and golden.
- Let it cool slightly before serving.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. To freeze, cover tightly and store for up to 3 months.
