Description

A delicious and wholesome casserole packed with lean protein from ground turkey and fresh zucchini, perfect for satisfying weeknight dinners.


Ingredients

  • 1 pound ground turkey
  • 2 medium zucchinis, sliced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can diced tomatoes (14.5 oz)
  • 1 cup shredded cheese (mozzarella or cheddar)
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Heat olive oil in a large skillet over medium heat. Add onion and garlic, sauté until fragrant.
  3. Add ground turkey to the skillet and cook until browned.
  4. Stir in zucchini, diced tomatoes, Italian seasoning, salt, and pepper; cook for another 5-7 minutes.
  5. Transfer the mixture to a baking dish and sprinkle cheese on top.
  6. Bake for 25-30 minutes or until cheese is bubbly and golden.
  7. Let it cool slightly before serving.
