- 1 pound ground beef
- 2 medium zucchinis, sliced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can diced tomatoes (14.5 oz)
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 cup shredded cheese (optional)
- Olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- Heat a drizzle of olive oil in a skillet over medium heat. Add the diced onions and minced garlic, and sauté until translucent.
- Add ground beef to the skillet, cook until browned, and drain excess fat. Stir in sliced zucchini, diced tomatoes, Italian seasoning, salt, and pepper. Cook for an additional 5 minutes.
- Transfer the mixture into a baking dish, sprinkle cheese on top if desired, and bake for 25-30 minutes until tender and cheese is melted.
Notes
Use lean ground beef for a lighter dish. For an extra vegetable boost, consider adding bell peppers or mushrooms. This recipe is freezer-friendly.
