Description

A hearty and satisfying casserole featuring ground beef and fresh zucchini, topped with melted cheese for extra comfort.


Ingredients

  • 1 pound ground beef
  • 2 medium zucchinis, sliced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can diced tomatoes (14.5 oz)
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)
  • Olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat a drizzle of olive oil in a skillet over medium heat. Add the diced onions and minced garlic, and sauté until translucent.
  3. Add ground beef to the skillet, cook until browned, and drain excess fat. Stir in sliced zucchini, diced tomatoes, Italian seasoning, salt, and pepper. Cook for an additional 5 minutes.
  4. Transfer the mixture into a baking dish, sprinkle cheese on top if desired, and bake for 25-30 minutes until tender and cheese is melted.

Notes

Use lean ground beef for a lighter dish. For an extra vegetable boost, consider adding bell peppers or mushrooms. This recipe is freezer-friendly.
