Description
These Crispy Garlic Parmesan Smashed Potatoes are crispy on the outside and tender on the inside, featuring rich garlic and cheese flavors, perfect as a side dish or tasty snack.

- 2 pounds of small potatoes
- 4 tablespoons of olive oil
- 4 cloves of garlic, minced
- 1/2 cup of grated Parmesan cheese
- Salt and pepper to taste
- 2 tablespoons of fresh parsley, chopped (optional)
Instructions
- Preheat the oven to 450°F (230°C). Bring a large pot of salted water to a boil. Add the small potatoes and cook until they are tender, about 15-20 minutes.
- Drain the boiled potatoes and allow them to cool slightly.
- Place the potatoes on a baking sheet lined with parchment paper. Using a fork or a potato masher, gently smash each potato until it’s about 1/2 inch thick.
- In a small bowl, combine the olive oil, minced garlic, salt, and pepper. Mix well.
- Drizzle the olive oil mixture generously over the smashed potatoes.
- Sprinkle the grated Parmesan cheese evenly over the top of the potatoes.
- Bake in the preheated oven for 20-25 minutes, or until the potatoes are crispy and golden brown.
- Garnish with fresh chopped parsley if desired, and serve hot.
