Description

These Crispy Garlic Parmesan Smashed Potatoes are crispy on the outside and tender on the inside, featuring rich garlic and cheese flavors, perfect as a side dish or tasty snack.


Ingredients

  • 2 pounds of small potatoes
  • 4 tablespoons of olive oil
  • 4 cloves of garlic, minced
  • 1/2 cup of grated Parmesan cheese
  • Salt and pepper to taste
  • 2 tablespoons of fresh parsley, chopped (optional)

Instructions

  1. Preheat the oven to 450°F (230°C). Bring a large pot of salted water to a boil. Add the small potatoes and cook until they are tender, about 15-20 minutes.
  2. Drain the boiled potatoes and allow them to cool slightly.
  3. Place the potatoes on a baking sheet lined with parchment paper. Using a fork or a potato masher, gently smash each potato until it’s about 1/2 inch thick.
  4. In a small bowl, combine the olive oil, minced garlic, salt, and pepper. Mix well.
  5. Drizzle the olive oil mixture generously over the smashed potatoes.
  6. Sprinkle the grated Parmesan cheese evenly over the top of the potatoes.
  7. Bake in the preheated oven for 20-25 minutes, or until the potatoes are crispy and golden brown.
  8. Garnish with fresh chopped parsley if desired, and serve hot.
