Description

A rich, comforting skillet dish that combines pillowy gnocchi with shredded chicken, bacon, and a velvety cheese sauce, making it a cozy, crowd-pleasing meal.


Ingredients

  • 1 lb chicken breast, cooked and shredded
  • 1 package gnocchi
  • 1 cup chicken broth
  • 1 cream cheese (8 oz)
  • 1 cup shredded cheddar cheese
  • 1 packet ranch seasoning mix
  • 1 cup cooked bacon, crumbled
  • 1/2 cup green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Cook gnocchi according to package instructions, drain, and set aside. Shred the cooked chicken and crumble the bacon. Chop the green onions and measure cheese and broth.
  2. In a large skillet over medium heat, add the shredded chicken, chicken broth, and ranch seasoning. Cut the cream cheese into cubes and nestle them in the skillet so they begin to soften.
  3. Stir the skillet mixture over medium heat until the cream cheese is fully melted and the sauce is smooth. Stir in the shredded cheddar cheese and continue to mix until it melts into the sauce and becomes creamy.
  4. Add the cooked gnocchi to the skillet and gently fold to coat with sauce. Fold in the crumbled bacon and chopped green onions. Taste and adjust salt and pepper as needed. Serve warm.

Notes

Use pre-cooked chicken and bacon to keep prep short. For a lighter sauce, substitute half the cream cheese with plain Greek yogurt.
