Description
A warm and comforting dish with tender chicken, hearty vegetables, and fluffy dumplings in a savory broth, perfect for chilly nights.
Ingredients
Scale
- 1 lb chicken breast, cooked and shredded
- 4 cups chicken broth
- 1 cup carrots, chopped
- 1 cup celery, chopped
- 1 onion, diced
- 2 cups flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- 2 tablespoons butter, melted
- 1 cup milk
- Herbs (e.g., thyme, parsley) to taste
Instructions
- In a large pot, heat the chicken broth over medium heat. Add the cooked chicken, diced carrots, chopped celery, and diced onion. Let this mixture simmer for about 10 minutes, so the flavors meld together.
- While the broth simmers, prepare the dumpling dough in a separate bowl. Combine the flour, baking powder, and salt. Then add the melted butter and milk, mixing until just combined.
- Once the vegetables are tender, drop spoonfuls of the dumpling dough into the boiling soup. Reduce the heat to low and cover the pot. Let it simmer for about 10-15 minutes. The dumplings will puff up and become fluffy.
- After the dumplings are cooked through, season your soup with your choice of herbs. Thyme and parsley work wonderfully, enhancing the flavor and freshness of the dish. Serve hot with some crusty bread for a complete meal.
Notes
For deeper flavor, consider sautéing the onion, carrots, and celery in a bit of oil before adding the chicken broth. If you’re short on time, rotisserie chicken is a fantastic shortcut.
