Description

A comforting and hearty casserole that combines ground beef, tender rice, and gooey melted cheese, perfect for busy weeknight dinners.


Ingredients

  • 1 pound ground beef
  • 1 cup uncooked rice
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 cup beef broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Optional: chopped green onions for garnish

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Heat olive oil in a large skillet over medium heat. Add chopped onion and minced garlic, sauté until fragrant.
  3. Add the ground beef, breaking it up, and cook until browned. Drain excess fat, then stir in rice, diced tomatoes (with juice), beef broth, salt, and pepper. Bring to a boil, reduce heat, cover, and simmer for about 20 minutes.
  4. Transfer the mixture to a casserole dish, top with cheese, and bake for 20-25 minutes until cheese is melted and bubbly.

Notes

For added flavor, use flavored rice or add taco seasoning. Store leftovers in an airtight container for up to 3-4 days.
