- 1 pound ground beef
- 1 cup uncooked rice
- 1 can (14.5 oz) diced tomatoes
- 1 cup shredded cheese (cheddar or mozzarella)
- 1 cup beef broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
- Optional: chopped green onions for garnish
Instructions
- Preheat the oven to 350°F (175°C).
- Heat olive oil in a large skillet over medium heat. Add chopped onion and minced garlic, sauté until fragrant.
- Add the ground beef, breaking it up, and cook until browned. Drain excess fat, then stir in rice, diced tomatoes (with juice), beef broth, salt, and pepper. Bring to a boil, reduce heat, cover, and simmer for about 20 minutes.
- Transfer the mixture to a casserole dish, top with cheese, and bake for 20-25 minutes until cheese is melted and bubbly.
Notes
For added flavor, use flavored rice or add taco seasoning. Store leftovers in an airtight container for up to 3-4 days.
