Instructions
- In a large pot or skillet, heat olive oil over medium heat to start releasing the beautiful flavors of the oil.
- Add the onion and garlic to the pot, sautéing until softened and fragrant, about 3-4 minutes.
- Stir in the sliced carrots and chopped bell pepper, cooking for a few more minutes until the vegetables begin to soften.
- Add the chopped cabbage to the pot and stir well to combine all the vegetables. Pour in the vegetable broth, then add salt, pepper, and apple cider vinegar. Bring the mixture to a simmer, cover, and cook for about 30 minutes, stirring occasionally, until the cabbage is tender.
