Description

A simple and savory snack featuring fresh zucchini, garlic, and Parmesan, with a crispy exterior and tender interior.


Ingredients

  • 2 medium zucchinis, grated
  • 2 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs
  • 1 egg, beaten
  • Salt and pepper to taste
  • Olive oil for frying
  • Fresh parsley for garnish (optional)

Instructions

  1. Grate the zucchinis, squeeze out moisture using a towel, and set aside.
  2. In a mixing bowl, combine grated zucchini, minced garlic, Parmesan cheese, breadcrumbs, and beaten egg. Season with salt and pepper and mix well.
  3. Heat olive oil in a frying pan over medium heat. Form the mixture into small patties and flatten slightly.
  4. Fry the patties for about 3–4 minutes on each side until golden brown and crisp. Drain on paper towels.
  5. Garnish with fresh parsley if desired, and serve hot.

Notes

For extra crispness, finish in a hot oven for 5 minutes after frying. You can also bake the patties at 400°F (200°C) for a lighter option.
