- 2 medium zucchinis, grated
- 2 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 1/2 cup breadcrumbs
- 1 egg, beaten
- Salt and pepper to taste
- Olive oil for frying
- Fresh parsley for garnish (optional)
Instructions
- Grate the zucchinis, squeeze out moisture using a towel, and set aside.
- In a mixing bowl, combine grated zucchini, minced garlic, Parmesan cheese, breadcrumbs, and beaten egg. Season with salt and pepper and mix well.
- Heat olive oil in a frying pan over medium heat. Form the mixture into small patties and flatten slightly.
- Fry the patties for about 3–4 minutes on each side until golden brown and crisp. Drain on paper towels.
- Garnish with fresh parsley if desired, and serve hot.
Notes
For extra crispness, finish in a hot oven for 5 minutes after frying. You can also bake the patties at 400°F (200°C) for a lighter option.
