- 1 cup white cheddar cheese, shredded
- 1 medium apple, peeled and diced
- 1 can (15 oz) white beans, drained and rinsed
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 tsp ground cumin
- 1 tsp paprika
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- In a large pot, heat olive oil over medium heat. Add chopped onion and garlic, sauté until the onion becomes translucent.
- Stir in the diced apple and cook for another 2-3 minutes.
- Add the cooked shredded chicken, white beans, chicken broth, ground cumin, paprika, salt, and pepper. Bring to a gentle simmer.
- Lower the heat and let it simmer for about 20 minutes, stirring occasionally. Stir in the white cheddar cheese until melted and well combined.
