Ingredients

  • 1 lb chicken breast, cooked and shredded
  • 1 cup white cheddar cheese, shredded
  • 1 medium apple, peeled and diced
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 tsp ground cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onion and garlic, sauté until the onion becomes translucent.
  2. Stir in the diced apple and cook for another 2-3 minutes.
  3. Add the cooked shredded chicken, white beans, chicken broth, ground cumin, paprika, salt, and pepper. Bring to a gentle simmer.
