Description

A warm, fluffy bake bursting with flavor, combining creamy cottage cheese and juicy blueberries, perfect for breakfast or a wholesome snack.


Ingredients

  • 2 cups cottage cheese
  • 2 cups fresh blueberries
  • 1/2 cup rolled oats
  • 1/4 cup honey or maple syrup
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/2 tsp baking powder
  • Salt to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the cottage cheese, rolled oats, honey (or maple syrup), eggs, vanilla extract, cinnamon, baking powder, and a pinch of salt. Stir until well mixed.
  3. Gently fold in the blueberries, being careful not to mash them.
  4. Pour the mixture into a greased baking dish, ensuring it’s spread evenly. Bake in the preheated oven for 30-35 minutes until set and lightly golden on top.
  5. Let it cool slightly before serving. Enjoy warm!
