- 2 cups cottage cheese
- 2 cups fresh blueberries
- 1/2 cup rolled oats
- 1/4 cup honey or maple syrup
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- 1/2 tsp baking powder
- Salt to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the cottage cheese, rolled oats, honey (or maple syrup), eggs, vanilla extract, cinnamon, baking powder, and a pinch of salt. Stir until well mixed.
- Gently fold in the blueberries, being careful not to mash them.
- Pour the mixture into a greased baking dish, ensuring it’s spread evenly. Bake in the preheated oven for 30-35 minutes until set and lightly golden on top.
- Let it cool slightly before serving. Enjoy warm!
