- 1 bag frozen tater tots
- 1 block firm tofu
- 2 cups fresh spinach
- 1/4 cup nutritional yeast
- 1 cup plant-based milk
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp salt
- 1/2 tsp pepper
Instructions
- Preheat the oven to 400°F (200°C). Grease a 9×13-inch casserole dish.
- Crumble the tofu into a mixing bowl, then add nutritional yeast, plant-based milk, garlic powder, onion powder, salt, and pepper. Mix well.
- Layer frozen tater tots in the casserole dish, then spread the tofu mixture over them. Top with fresh spinach and add another layer of tater tots.
- Bake for 25-30 minutes until the top tater tots are golden brown and crispy.
- Let cool for a few minutes before serving.
Notes
For a creamier texture, add more plant milk or olive oil to the tofu mixture. Store leftovers in the fridge for up to 3-4 days or freeze individual portions.
