Description

A cozy, hands-off morning dish with crispy tater tots and a savory tofu base flavored with nutritional yeast and spices, topped with fresh spinach.


Ingredients

  • 1 bag frozen tater tots
  • 1 block firm tofu
  • 2 cups fresh spinach
  • 1/4 cup nutritional yeast
  • 1 cup plant-based milk
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 1/2 tsp pepper

Instructions

  1. Preheat the oven to 400°F (200°C). Grease a 9×13-inch casserole dish.
  2. Crumble the tofu into a mixing bowl, then add nutritional yeast, plant-based milk, garlic powder, onion powder, salt, and pepper. Mix well.
  3. Layer frozen tater tots in the casserole dish, then spread the tofu mixture over them. Top with fresh spinach and add another layer of tater tots.
  4. Bake for 25-30 minutes until the top tater tots are golden brown and crispy.
  5. Let cool for a few minutes before serving.

Notes

For a creamier texture, add more plant milk or olive oil to the tofu mixture. Store leftovers in the fridge for up to 3-4 days or freeze individual portions.
