Description

Soft and chewy granola bars blending the flavors of carrot cake, perfect for breakfast on the go or as a snack.


Ingredients

Scale
  • 2 cups rolled oats
  • 1 cup grated carrots
  • 1/2 cup almond butter
  • 1/3 cup maple syrup
  • 1/2 cup walnuts, chopped
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 cup raisins
  • 1/4 cup shredded coconut (optional)
  • 1/2 tsp vanilla extract
  • A pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  2. Lightly toast the walnuts in a dry pan for 3–4 minutes and let them cool.
  3. In a large mixing bowl, combine the rolled oats, grated carrots, walnuts, raisins, shredded coconut (if using), cinnamon, nutmeg, and a pinch of salt. Stir well.
  4. In another bowl, mix together the almond butter, maple syrup, and vanilla extract until smooth.
  5. Pour the wet ingredients into the dry ingredients and stir until thoroughly combined.
  6. Press the mixture firmly into the prepared baking pan in an even layer.
  7. Bake for 25–30 minutes or until the edges start to turn golden.
  8. Allow to cool in the pan for about 10 minutes, then lift out and transfer to a wire rack to cool completely. Cut into 12 bars.
  9. Store the granola bars in an airtight container for up to 3 days at room temperature, or refrigerate for up to 1 week.

Notes

Press the mixture firmly to ensure bars hold together. For no-bake version, chill for 1 hour.
