A warm, comforting lasagna bake that boosts protein with cottage cheese and lean meat, featuring garlic, herbs, and tender noodles.

- 9 lasagna noodles
- 2 cups cottage cheese
- 2 cups shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- 2 cups marinara sauce
- 1 pound ground turkey or lean beef
- 1 egg
- 2 cups spinach (fresh or frozen)
- Salt and pepper to taste
- 1 teaspoon Italian seasoning
Instructions
- Preheat your oven to 375°F (190°C). Bring a large pot of salted water to a boil and cook the lasagna noodles until al dente. Drain and lay them flat.
- In a medium bowl, combine cottage cheese, beaten egg, Italian seasoning, and salt and pepper. Mix until smooth and set aside.
- Heat a skillet over medium heat and cook ground turkey or beef until browned. Drain fat and season. Spread a layer of marinara sauce in a baking dish. Layer noodles, cottage cheese mixture, spinach, and mozzarella. Repeat layers and top with remaining noodles, marinara, Parmesan, and mozzarella.
- Cover with foil and bake for 25 minutes. Remove foil and bake for another 15 minutes, until golden and bubbly. Let rest for 5–10 minutes before slicing.
Notes
For a lighter meal, serve with a green salad. To make it gluten-free, use gluten-free lasagna noodles or vegetable substitutes.
