- 2 boneless, skinless chicken breasts
- 1/4 cup honey
- 1/4 cup lime juice
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- Salt and pepper to taste
- Lettuce leaves for stacking
- Sliced avocado for topping
- Diced tomatoes for topping
Instructions
- Whisk together the honey, lime juice, minced garlic, chili powder, salt, and pepper until smooth. Pat the chicken breasts dry with paper towels.
- Place the chicken in a dish or bag, pour the honey-lime mixture over and coat well. Marinate in the fridge for at least 30 minutes.
- Preheat a grill or skillet over medium-high heat and lightly oil. Remove chicken from marinade and cook for 6–7 minutes per side, until cooked through.
- Let the chicken rest for 3–5 minutes, then slice thinly. Assemble stacks with lettuce, chicken, avocado, and tomatoes, drizzling with reserved sauce before serving.
Notes
Store components separately for best texture. Freeze cooked chicken (no lettuce) for up to 3 months.
