Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, combine the flour, sugar, baking powder, and salt. Stir until well mixed.
- In another bowl, whisk together the milk, vegetable oil, eggs, and vanilla extract until smooth.
- Pour the wet mixture into the bowl of dry ingredients. Stir gently until just combined.
- Fold in the mixed dried fruits and add cinnamon if desired.
- Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
- Bake for 50-60 minutes, or until a toothpick comes out clean.
