Creamy, savory, and quick to pull together, this Spinach Stuffed Chicken Breast is a weeknight winner with a warm filling of spinach, cream cheese, mozzarella, and garlic.


Ingredients

  • 2 chicken breasts
  • 1 cup fresh spinach, chopped
  • 1/2 cup cream cheese, softened
  • 1/4 cup mozzarella cheese, shredded
  • 2 cloves garlic, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 375°F (190°C). Pat the chicken breasts dry. Cut a pocket into each chicken breast.
  2. In a bowl, mix spinach, cream cheese, mozzarella, garlic, salt, and pepper. Stuff each chicken pocket with the mixture.
  3. Heat olive oil in a skillet. Sear the stuffed chicken for 2–3 minutes per side until browned. Transfer to a baking dish and bake for 25–30 minutes until cooked through.
  4. Let the chicken rest for 5 minutes before slicing and serving hot.

Notes

For best results, use room-temperature cream cheese and ensure the chicken is dry before searing. You can customize the filling with different cheeses or add-ins.
