- 2 cups fresh spinach, chopped
- 1 cup shredded cheese (e.g., cheddar or parmesan)
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- Olive oil or cooking spray for baking
Instructions
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper and lightly spray with olive oil or cooking spray.
- In a mixing bowl, combine the chopped spinach, shredded cheese, garlic powder, salt, and black pepper. Mix well, and if the spinach feels wet, gently squeeze out excess moisture.
- Drop spoonfuls of the mixture onto the prepared baking sheet, spacing them about 1–2 inches apart. Flatten each spoonful slightly. Bake for 10–15 minutes, or until edges are crispy.
- Allow to cool on the baking sheet for 2–3 minutes, then transfer to a wire rack to cool completely before serving.
Notes
Serve warm with yogurt dip, marinara sauce, or as a topping for soups and salads. To keep crunchy, store in an airtight container at room temperature.
