Description

A simple twist on a classic appetizer, these deviled eggs are creamy and tangy with a crunch from fresh green onions.


Ingredients

  • 6 hard-boiled eggs
  • 1/4 cup sour cream
  • 2 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1/4 cup finely chopped green onions
  • Salt and pepper to taste
  • Paprika for garnish

Instructions

  1. Cut the hard-boiled eggs in half lengthwise and remove the yolks. Place the whites on a tray. Set the yolks in a mixing bowl. Peel and finely chop the green onions if not already done.
  2. Mash the yolks with a fork. Mix in the sour cream, mayonnaise, Dijon mustard, and the chopped green onions. Season with salt and pepper to taste. Stir until the filling is smooth and creamy. Taste and adjust seasoning.
  3. Spoon or pipe the mixture back into the egg whites. Use a small spoon or a piping bag fitted with a round or star tip for neat mounds. Arrange filled eggs on a serving plate.
  4. Sprinkle paprika on top for garnish. Chill for at least 30 minutes before serving so the filling firms and the flavors blend. Serve cold or at cool room temperature.

Notes

These deviled eggs can be made ahead of time. For best texture, fill and chill up to 3 hours before serving. To prevent rubbery whites, do not heat hard-boiled eggs.
