- 2 cups cooked chicken, shredded
- 1 cup mixed greens (spinach, arugula, etc.)
- 1/2 cup cherry tomatoes, halved
- 1/4 cup cucumber, sliced
- 1/4 cup red onion, thinly sliced
- 1/4 cup feta cheese, crumbled
- 4 large whole wheat tortillas
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- Gather all ingredients and shred the cooked chicken. Halve the cherry tomatoes, slice the cucumber thinly, and thinly slice the red onion. Crumble the feta and lay the tortillas flat on a clean surface.
- Combine the shredded chicken, mixed greens, cherry tomatoes, cucumber, red onion, and crumbled feta in a large bowl. Drizzle with olive oil and lemon juice, season with salt and pepper, and toss gently.
- Warm the chicken in a skillet over medium heat for 2–3 minutes if preferred, then let it cool slightly before mixing.
- Divide the chicken mixture among the tortillas, fold in the sides, and roll up tightly. Cut each wrap in half and serve immediately or wrap in foil for meal prep.
Notes
Serve with vegetable sticks or a small side salad. Store tightly wrapped in the refrigerator for up to 24 hours.
