Description

A warm, savory soup that captures the cozy flavors of classic shepherd’s pie, featuring ground meat, potatoes, and vegetables in a rich broth.


Ingredients

  • 1 pound ground beef or lamb
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups beef broth
  • 2 cups frozen peas
  • 3 potatoes, peeled and diced
  • 1 tablespoon tomato paste
  • 1 teaspoon Worcestershire sauce
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, brown the ground beef or lamb over medium heat. Drain any excess fat.
  2. Add the chopped onion, carrots, and celery to the pot. Cook for about 5 minutes until softened.
  3. Stir in the diced potatoes, tomato paste, and Worcestershire sauce. Pour in the beef broth and bring to a boil. Reduce heat and let simmer for about 20 minutes.
  4. Add the frozen peas and cook for an additional 5 minutes. Season with salt and pepper to taste. Serve hot, garnished with fresh parsley.

Notes

For a richer flavor, add a bay leaf and thyme while simmering. To thicken, mash some cooked potatoes against the pot side.
