Description

A quick and colorful salad made with shaved rainbow carrots and a warm sesame dressing, perfect as a side or light lunch.


Ingredients

  • 4 medium rainbow carrots
  • 2 tablespoons sesame oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon soy sauce
  • 1 tablespoon honey or maple syrup
  • 2 tablespoons sesame seeds
  • Salt and pepper to taste
  • Fresh cilantro or parsley for garnish

Instructions

  1. Using a vegetable peeler or mandolin, shave the rainbow carrots into thin ribbons. Transfer the ribbons to a large mixing bowl.
  2. In another bowl, whisk together the sesame oil, rice vinegar, soy sauce, and honey or maple syrup until smooth.
  3. Add the shaved carrots to the dressing and toss to coat. Let sit for 3–5 minutes for the flavors to meld.
  4. Sprinkle sesame seeds over the salad, season with salt and pepper, and garnish with fresh cilantro or parsley before serving.

Notes

For a vegan option, substitute honey with maple syrup. Store in an airtight container for up to 3 days.
