Description
A quick and colorful salad made with shaved rainbow carrots and a warm sesame dressing, perfect as a side or light lunch.

- 4 medium rainbow carrots
- 2 tablespoons sesame oil
- 1 tablespoon rice vinegar
- 1 teaspoon soy sauce
- 1 tablespoon honey or maple syrup
- 2 tablespoons sesame seeds
- Salt and pepper to taste
- Fresh cilantro or parsley for garnish
Instructions
- Using a vegetable peeler or mandolin, shave the rainbow carrots into thin ribbons. Transfer the ribbons to a large mixing bowl.
- In another bowl, whisk together the sesame oil, rice vinegar, soy sauce, and honey or maple syrup until smooth.
- Add the shaved carrots to the dressing and toss to coat. Let sit for 3–5 minutes for the flavors to meld.
- Sprinkle sesame seeds over the salad, season with salt and pepper, and garnish with fresh cilantro or parsley before serving.
Notes
For a vegan option, substitute honey with maple syrup. Store in an airtight container for up to 3 days.
