These rollups bring the rich, beefy taste of a French dip in a fun, hand-held format, perfect for parties or quick snacks.

- 4 large tortillas
- 1 pound roast beef, thinly sliced
- 1 cup provolone cheese, shredded
- 1/2 cup au jus sauce
- 1/4 cup mayonnaise
- 1 tablespoon Dijon mustard
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a small bowl, mix together mayonnaise and Dijon mustard until smooth. Taste and season lightly with salt and pepper. Lay the tortillas flat on a clean surface.
- Spread the mayonnaise-Dijon mixture evenly over each tortilla. Layer the sliced roast beef across each tortilla in an even layer. Sprinkle shredded provolone on top of the beef so it will melt slightly when served warm.
- Roll up each tortilla tightly from one edge to the other. Use a sharp knife to slice each roll into pinwheels or cut them in half for larger pieces. If you prefer warm rolls, place pinwheels seam-side down in a skillet over low heat for 1–2 minutes to warm and melt the cheese slightly.
- Pour au jus into a small serving bowl and warm it gently if desired. Arrange the pinwheels on a platter. Serve with the au jus for dipping and garnish with fresh parsley for color and aroma.
Notes
These rollups can be served warm or at room temperature. For a richer dip, enhance the au jus with beef broth and a splash of Worcestershire sauce.
