Description

A vibrant salad combining roasted zucchini, hearty sausage, and tender orzo pasta, perfect for lunch or dinner.


Ingredients

  • 1 cup orzo pasta
  • 2 medium zucchini, sliced
  • 1 pound sausage (Italian or your choice), sliced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup fresh basil, chopped
  • Juice of 1 lemon

Instructions

  1. Preheat the oven to 400°F (200°C). In a large bowl, toss the sliced zucchini with olive oil, salt, and pepper.
  2. Spread the seasoned zucchini out on a baking sheet in a single layer and roast for about 20 minutes, or until golden and tender.
  3. While the zucchini roasts, cook the orzo according to package instructions. Once cooked, drain and set aside.
  4. In a skillet over medium heat, add the sliced sausage and cook until browned and cooked through, about 8-10 minutes.
  5. In a large bowl, combine the roasted zucchini, cooked orzo, sausage, cherry tomatoes, feta cheese, basil, and lemon juice. Toss everything together gently.

Notes

For meal prep, store in an airtight container. It keeps well for 3-4 days in the fridge.
