Description

Ingredients

  • 1 bunch Asparagus
  • 45 Carrots
  • 2 tbsp Olive oil
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 2 cloves Garlic (optional)
  • 1/4 cup Parmesan cheese (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and trim the asparagus, and peel and chop the carrots into uniform pieces.
  3. Place the asparagus and carrots on a baking sheet in a single layer.
  4. Drizzle with olive oil and season with salt and pepper. Toss to coat evenly.
  5. Roast in the oven for about 20-25 minutes or until vegetables are tender and slightly caramelized.
  6. Serve warm as a delicious side dish.

Notes

For added flavor, consider marinating the vegetables in olive oil, garlic, and herbs for 30 minutes before roasting.
