- 4–5 Carrots
- 2 tbsp Olive oil
- 1 tsp Salt

Instructions
- Preheat your oven to 425°F (220°C).
- Wash and trim the asparagus, and peel and chop the carrots into uniform pieces.
- Place the asparagus and carrots on a baking sheet in a single layer.
- Drizzle with olive oil and season with salt and pepper. Toss to coat evenly.
- Roast in the oven for about 20-25 minutes or until vegetables are tender and slightly caramelized.
- Serve warm as a delicious side dish.
Notes
For added flavor, consider marinating the vegetables in olive oil, garlic, and herbs for 30 minutes before roasting.
