- 2 cups cooked chicken, shredded
- 4 oz cream cheese
- 4 cups chicken broth
- 1 cup heavy cream
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 cup spinach (optional)
- 1/4 cup chopped green onions for garnish
Instructions
- In a large pot, combine the chicken broth, garlic powder, and onion powder. Bring to a gentle simmer over medium heat. Adjust seasonings to taste.
- Add the shredded chicken to the broth and warm for about 5 minutes, stirring occasionally.
- Lower heat to medium-low. Add cream cheese in small pieces and stir until melted and creamy. Pour in heavy cream and simmer gently for 3–5 minutes.
- If using, stir in spinach and allow to wilt for about 1 minute. Season with salt and pepper, then ladle into bowls and garnish with green onions. Serve hot.
Notes
Use room-temperature cream cheese for the best results. For a thinner soup, add extra broth. Store in the fridge for 3–4 days or freeze for up to 2 months.
