A rich and creamy soup with shredded chicken and cream cheese, perfect for a comforting, low-carb meal.


Ingredients

  • 2 cups cooked chicken, shredded
  • 4 oz cream cheese
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup spinach (optional)
  • 1/4 cup chopped green onions for garnish

Instructions

  1. In a large pot, combine the chicken broth, garlic powder, and onion powder. Bring to a gentle simmer over medium heat. Adjust seasonings to taste.
  2. Add the shredded chicken to the broth and warm for about 5 minutes, stirring occasionally.
  3. Lower heat to medium-low. Add cream cheese in small pieces and stir until melted and creamy. Pour in heavy cream and simmer gently for 3–5 minutes.
  4. If using, stir in spinach and allow to wilt for about 1 minute. Season with salt and pepper, then ladle into bowls and garnish with green onions. Serve hot.

Notes

Use room-temperature cream cheese for the best results. For a thinner soup, add extra broth. Store in the fridge for 3–4 days or freeze for up to 2 months.
