- Ice cubes

Instructions
- In a blender, puree the watermelon until smooth. Work in batches if needed for an even puree.
- Strain the juice through a fine mesh sieve into a pitcher, discarding the pulp. Add lime juice and mint leaves to the watermelon juice, stirring to combine.
- Fill glasses with ice cubes and pour the watermelon mixture over the ice.
- Top each glass with sparkling water. Garnish with fresh mint sprigs and serve immediately.
