Description

A bright, creamy drink blending tart raspberries with sweet pineapple and rich coconut, perfect for a tropical treat.


Ingredients

  • 1 cup fresh raspberries
  • 1 cup coconut milk (full-fat or lite)
  • 1 cup pineapple juice
  • 1 cup ice
  • 12 tablespoons sugar (optional, to taste)
  • Fresh raspberries and pineapple wedges for garnish

Instructions

  1. Gather all ingredients and rinse fresh raspberries. Chill glasses in the freezer if desired.
  2. In a blender, combine raspberries, coconut milk, pineapple juice, and ice. Add sugar if preferred.
  3. Blend on high until smooth and frothy, about 20–30 seconds. Stop to scrape down sides if needed.
  4. Taste and adjust sweetness if required, then blend quickly again. Pour into chilled glasses and garnish with fresh raspberries and pineapple wedges.

Notes

Best served fresh; refrigerate in an airtight container for up to 24 hours if needed. Stir or re-blend before serving.
