- 1 cup fresh raspberries
- 1 cup coconut milk (full-fat or lite)
- 1 cup pineapple juice
- 1 cup ice
- 1–2 tablespoons sugar (optional, to taste)
- Fresh raspberries and pineapple wedges for garnish
Instructions
- Gather all ingredients and rinse fresh raspberries. Chill glasses in the freezer if desired.
- In a blender, combine raspberries, coconut milk, pineapple juice, and ice. Add sugar if preferred.
- Blend on high until smooth and frothy, about 20–30 seconds. Stop to scrape down sides if needed.
- Taste and adjust sweetness if required, then blend quickly again. Pour into chilled glasses and garnish with fresh raspberries and pineapple wedges.
Notes
Best served fresh; refrigerate in an airtight container for up to 24 hours if needed. Stir or re-blend before serving.
