Description

A fast, bright strawberry filling that adds vibrant flavor and moisture to cakes and cupcakes.


Ingredients

  • 1 cup fresh strawberries, chopped
  • 1/2 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 cup water
  • 1 teaspoon vanilla extract

Instructions

  1. Wash and hull the strawberries. Chop them into small pieces.
  2. In a medium saucepan, combine chopped strawberries and granulated sugar. In a separate bowl, stir cornstarch into water until dissolved.
  3. Pour the cornstarch mixture into the saucepan and cook over medium heat, stirring frequently, for about 3–5 minutes until it thickens.
  4. Remove from heat, stir in vanilla extract, and let it cool to room temperature before using.

Notes

Refrigerate in an airtight container for up to 5 days or freeze for up to 3 months. Use ripe strawberries for the best flavor.
