Ingredients

- 1 cup pumpkin puree
- 1 cup grated carrots
- 2 cups whole wheat flour
- 1/4 cup rolled oats
- 1/4 cup peanut butter
- 1/4 cup water
- 1 egg
Instructions
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease it.
- In a large bowl, mix together the pumpkin puree, grated carrots, peanut butter, and egg until smooth. Gradually add the flour and oats, stirring until a rough dough forms. Add water as needed.
- Turn the dough out onto a lightly floured surface and roll it to about 1/4 inch thick. Use cookie cutters to cut the dough and place shapes on the baking sheet.
- Bake for 20–25 minutes until golden brown and firm. Let cool before serving.
Notes
Use plain canned pumpkin, not pumpkin pie filling. Store in an airtight container for up to 5 days at room temperature, 2 weeks in the refrigerator, or 3 months in the freezer.
