Description

A bright and cooling drink that blends sweet pineapple and crisp cucumber into a refreshing agua fresca, perfect for hot days.


Ingredients

Scale
  • 2 cups pineapple chunks
  • 1 cucumber, peeled and diced
  • 4 cups water
  • 2 tablespoons sugar (optional)
  • Juice of 1 lime
  • Fresh mint leaves (for garnish)

Instructions

  1. Peel and dice the cucumber, and measure the pineapple chunks. If your pineapple is not ready-cut, core and chop it into 2 cups of chunks. Juice one lime and set aside the mint for garnish.
  2. In a blender, combine the pineapple chunks, diced cucumber, and sugar (if using). Blend until smooth and no large pieces remain.
  3. Add the 4 cups of water and the lime juice to the blender. Blend again on low until everything is fully combined and evenly mixed.
  4. Strain the mixture through a fine mesh sieve into a pitcher if you prefer a smooth drink. Chill the pitcher in the refrigerator for at least 30 minutes. Serve over ice and garnish with fresh mint leaves.

Notes

Store in a sealed pitcher or airtight bottle in the refrigerator for up to 48 hours.
