Description

A creamy, nutty, and slightly sweet treat, perfect as a quick snack or healthy dessert.

Ingredients

Scale
  • 1 cup Greek yogurt
  • 1/2 cup peanut butter
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 cup granola or nuts (optional)
  • Chocolate chips (optional)

Instructions

  1. Gather ingredients and set out a mixing bowl, spoon, silicone mold or baking sheet, and parchment paper.
  2. In a mixing bowl, combine Greek yogurt, peanut butter, honey (or maple syrup), and vanilla extract. Mix until smooth and fully combined. Fold in optional mix-ins if desired.
  3. Scoop the mixture into small balls or use a silicone mold. Place on a parchment-lined baking sheet if not using a mold. Transfer to the freezer and let set for at least 2–3 hours until firm.
  4. Once firm, remove bites from the mold or baking sheet. Let sit at room temperature for 3–5 minutes if too hard, then serve chilled.

Notes

These bites can be customized with various mix-ins and are best stored in the freezer to prevent them from softening.
