- 1 lb ground chicken
- 1 cup grated Parmesan cheese
- 2 eggs
- 1 cup almond flour
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 tablespoon chopped parsley (optional)
Instructions
- Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper or lightly grease it.
- In a large bowl, combine the ground chicken, grated Parmesan, eggs, almond flour, garlic powder, onion powder, salt, and pepper. Mix until just combined.
- Scoop portions of the mixture and shape into balls. Place on the prepared baking sheet, spacing them about 1 inch apart.
- Bake for 20–25 minutes or until golden brown and internal temperature reaches 165°F (74°C). Broil for 1–2 minutes for extra browning if desired.
- Remove from oven and let rest for 3–5 minutes. Garnish with parsley if desired and serve warm.
