Description
A quick, cozy bowl that captures the savory flavors of an egg roll in soup form, perfect for a comforting weeknight meal.
Ingredients
Scale
- 1 lb ground beef
- 4 cups beef broth
- 2 cups coleslaw mix
- 1 cup sliced green onions
- 3 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 teaspoon ginger, minced
- Salt and pepper to taste
- Optional: wonton strips for garnish
Instructions
- Gather all ingredients. Mince the garlic and ginger, slice the green onions, and measure the broth and sauces.
- In a large pot over medium heat, add the ground beef. Cook until browned, breaking it into small pieces with a spoon. Drain any excess fat.
- Add the minced garlic and ginger to the browned beef. Cook for about 1 minute, stirring, until fragrant. Pour in the beef broth and bring the pot to a boil.
- Stir in the coleslaw mix, soy sauce, sesame oil, and sliced green onions. Reduce heat and let the soup simmer for 10–15 minutes, until the vegetables are tender but still slightly crisp. Season with salt and pepper to taste. Serve hot, garnished with wonton strips if desired.
Notes
For extra texture, consider adding frozen peas or thinly sliced mushrooms during the last 5 minutes of simmering. Add green onions just before serving for freshness.
