- 1 cup fresh spinach, chopped
- 1 cup mushrooms, sliced
- 1 cup milk
- 4 large eggs
- 1 cup shredded cheese (e.g., cheddar or mozzarella)
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1/2 onion, diced
Instructions
- Preheat the oven to 350°F (175°C).
- Heat olive oil in a skillet over medium heat and sauté the diced onions and sliced mushrooms until soft, about 5 minutes.
- Add the chopped spinach to the skillet and cook until wilted.
- Whisk together the eggs, milk, salt, and pepper in a mixing bowl.
- Stir in the sautéed vegetable mixture along with the shredded cheese.
- Pour the mixture into a greased pie dish or quiche pan. Bake for 30-35 minutes or until set and lightly golden.
- Let the quiche cool slightly before slicing and serving.
Notes
Serve warm with a side salad or topped with sour cream and fresh herbs. Leftovers can be refrigerated for up to 3 days or frozen for up to 2 months.
