Description

Ingredients

  • 1 cup fresh spinach, chopped
  • 1 cup mushrooms, sliced
  • 1 cup milk
  • 4 large eggs
  • 1 cup shredded cheese (e.g., cheddar or mozzarella)
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1/2 onion, diced

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Heat olive oil in a skillet over medium heat and sauté the diced onions and sliced mushrooms until soft, about 5 minutes.
  3. Add the chopped spinach to the skillet and cook until wilted.
  4. Whisk together the eggs, milk, salt, and pepper in a mixing bowl.
  5. Stir in the sautéed vegetable mixture along with the shredded cheese.
  6. Pour the mixture into a greased pie dish or quiche pan. Bake for 30-35 minutes or until set and lightly golden.
  7. Let the quiche cool slightly before slicing and serving.
