- 4 cups mixed greens
- 1 cup cherry tomatoes, halved
- 1/2 cup cucumber, sliced
- 1/4 cup red onion, thinly sliced
- 1/2 cup creamy goat cheese
- 1/4 cup walnuts, chopped
- 3 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- Salt and pepper to taste
Instructions
- Add mixed greens, halved cherry tomatoes, sliced cucumber, and thinly sliced red onion to a large salad bowl. Wash and dry the greens well.
- Crumble goat cheese over the top and sprinkle with chopped walnuts. Use your hands or a fork to break the goat cheese into small, creamy clumps.
- Whisk together olive oil, balsamic vinegar, and a pinch of salt and pepper in a small bowl until emulsified.
- Drizzle the dressing over the salad and toss gently to combine. Serve immediately.
