Description

A fast, colorful side salad that brightens any spring table, featuring crisp greens, juicy cherry tomatoes, cool cucumber, and tangy creamy goat cheese.


Ingredients

  • 4 cups mixed greens
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, sliced
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup creamy goat cheese
  • 1/4 cup walnuts, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Add mixed greens, halved cherry tomatoes, sliced cucumber, and thinly sliced red onion to a large salad bowl. Wash and dry the greens well.
  2. Crumble goat cheese over the top and sprinkle with chopped walnuts. Use your hands or a fork to break the goat cheese into small, creamy clumps.
  3. Whisk together olive oil, balsamic vinegar, and a pinch of salt and pepper in a small bowl until emulsified.
  4. Drizzle the dressing over the salad and toss gently to combine. Serve immediately.
