Instructions
- In a large bowl, mix together the peanut butter and honey until smooth.
- Stir in the vanilla extract.
- Gradually add the rolled oats and mix until well combined.
- Fold in the chocolate chips.
- If desired, sprinkle in powdered sugar for extra sweetness.
- Scoop out the mixture and form into balls or drop spoonfuls onto parchment paper.
- Refrigerate for at least 30 minutes or until set.
