- 8 oz pasta (pennette or fusilli)
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 can (5 oz) tuna, drained
- 1 cup cherry tomatoes, halved
- 1/2 cucumber, diced
- 1/4 red onion, finely chopped
- 1/2 cup black olives, sliced
- 1/4 cup feta cheese, crumbled
- 1/4 cup fresh parsley, chopped
- 3 tablespoons olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions until al dente. Drain it and let it cool.
- Combine the drained chickpeas, tuna, halved cherry tomatoes, diced cucumber, finely chopped red onion, sliced black olives, crumbled feta cheese, and freshly chopped parsley in a large bowl.
- Whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper in a small bowl.
- Add the cooled pasta to the vegetable and tuna mixture. Pour the dressing over the salad and gently toss everything to combine.
- Serve the Mediterranean Pasta Salad chilled or at room temperature for the best flavor experience.
