Ingredients

  • 1 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/2 cup unsalted butter, melted
  • 1 tablespoon lemon juice
  • Zest of 1 lemon
  • 1 cup lemon-lime soda

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×9 inch baking dish.
  2. Combine the flour, sugar, baking powder, and salt in a mixing bowl.
  3. Stir in the milk, melted butter, lemon juice, and lemon zest until just combined.
  4. Pour the batter into the prepared baking dish and gently pour the lemon-lime soda over the top (do not stir).
  5. Bake for about 40-45 minutes, until golden brown and a toothpick comes out clean.
  6. Cool slightly before serving, optionally with whipped cream or vanilla ice cream.

Notes
