Description

This casserole captures all the classic cheeseburger flavors in a low-carb dish that’s creamy, smoky, and satisfying without the bun.


Ingredients

  • 1 pound ground beef
  • 6 slices bacon
  • 1 cup cheddar cheese, shredded
  • 1/2 cup cream cheese
  • 1/2 cup sour cream
  • 1/2 cup diced onion
  • 1/2 cup diced pickles
  • 1 tablespoon mustard
  • Salt and pepper to taste
  • Eggs (for binding, optional)
  • Cauliflower rice (optional for a low-carb base)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking dish. Dice the onion and pickles, shred the cheddar if needed, and bring cream cheese to room temperature.
  2. In a skillet over medium heat, cook the bacon until crispy; remove and crumble. Cook ground beef and onion until beef is browned. Drain excess fat. In a large bowl, combine beef, onion, crumbled bacon, cream cheese, sour cream, cheddar, pickles, mustard, salt, and pepper. Optionally, mix in beaten eggs for binding.
  3. Transfer the mixture to the greased baking dish and spread evenly. If using cauliflower rice, either spread on the bottom or sprinkle on top. Bake in the preheated oven for 25–30 minutes, or until heated through and top is golden.
  4. Allow to cool for 5–10 minutes to set before serving. Garnish with extra pickles, mustard, or green onions as desired.

Notes

This dish can be refrigerated for up to 3–4 days or frozen for up to 2 months. Use a hot skillet for better browning and let cool briefly before serving.
