- 1 package of cheese tortellini
- 1 tablespoon olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 tablespoon Cajun seasoning
- Salt and pepper to taste
- Green onions for garnish
Instructions
- Cook the cheese tortellini according to package instructions and set aside. Drain well.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and diced bell pepper, cooking until the pepper begins to soften, about 2-3 minutes.
- Pour in the heavy cream and bring to a gentle simmer. Add the Parmesan cheese and Cajun seasoning, stirring until the cheese melts and the sauce becomes creamy.
- Add the cooked tortellini to the skillet, mixing well to coat. Season with salt and pepper to taste. Cook for an additional 2-3 minutes until heated through and the sauce thickens slightly.
- Garnish with chopped green onions before serving.
Notes
For extra depth, sauté smoked sausage or cooked bacon before the veggies. For variations, consider adding chicken, shrimp, or more vegetables.
