- 1 cup lentils
- 2 medium sweet potatoes, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 2 cups vegetable broth
- 1 teaspoon cumin
- 1 teaspoon paprika
- 2 cups spinach
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- Heat olive oil in a large pot over medium heat.
- Add the chopped onion and minced garlic; sauté until translucent.
- Combine lentils and diced sweet potatoes with spices and broth, then boil.
- Reduce heat and let simmer for 25-30 minutes until tender.
- Stir in spinach and season with salt and pepper.
- Transfer mixture to greased casserole dish and bake for 20-25 minutes.
