Description

A delicious and hearty casserole combining lentils and sweet potatoes, perfect for weeknight dinners or as a satisfying dish for guests.


Ingredients

  • 1 cup lentils
  • 2 medium sweet potatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 2 cups vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 2 cups spinach
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Heat olive oil in a large pot over medium heat.
  3. Add the chopped onion and minced garlic; sauté until translucent.
  4. Combine lentils and diced sweet potatoes with spices and broth, then boil.
  5. Reduce heat and let simmer for 25-30 minutes until tender.
  6. Stir in spinach and season with salt and pepper.
  7. Transfer mixture to greased casserole dish and bake for 20-25 minutes.
