Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together the ricotta cheese, granulated sugar, and softened butter until smooth. Beat in the egg, lemon zest, and vanilla extract until well combined.
- In another bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Drop tablespoons of the dough onto the prepared baking sheet, spacing about 2 inches apart. Bake for 12–15 minutes or until edges are lightly golden.
- Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack. For the glaze, whisk together the powdered sugar, lemon juice, and lemon zest until smooth. Drizzle over cooled cookies and let it set before serving.
Notes
Use room temperature ingredients for better mixing. For variations, consider adding poppy seeds, blueberries, or chocolate chips.
