- 1 1/2 cups all-purpose flour
- 1/2 cup sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 2 tablespoons poppy seeds
- 1/2 cup milk
- 1/3 cup vegetable oil
- 1 large egg
- 1 tablespoon lemon zest
- 2 tablespoons lemon juice
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together the flour, sugar, baking powder, salt, and poppy seeds.
- In another bowl, mix the milk, vegetable oil, egg, lemon zest, and lemon juice until combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined, being careful not to overmix.
- Fill the muffin cups about 2/3 full with the batter.
- Bake for 18–20 minutes or until a toothpick inserted comes out clean.
- Allow to cool for a few minutes in the pan before transferring to a wire rack to cool completely.
Notes
Serve warm with butter or a lemon glaze. Pairs well with coffee or tea.
