- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 2 tablespoons lemon juice
- 1 tablespoon lemon zest
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder

- 1/2 cup powdered sugar (for coating)
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper. Prep all ingredients and chill the baking sheet if desired.
- Cream together the butter and granulated sugar until light and fluffy. Beat in the egg, lemon juice, and lemon zest.
- In another bowl, whisk together the flour, baking powder, and salt. Gradually mix the dry ingredients into the wet ingredients until just combined.
- Chill the dough in the refrigerator for about 30 minutes. Roll the dough into 1-inch balls and coat in powdered sugar.
- Place the balls on the baking sheet and bake for 8–10 minutes until the edges are set and the centers are soft.
- Allow cookies to cool on the baking sheet for 2–3 minutes, then transfer to a wire rack to cool completely.
Notes
Use fresh lemon juice and zest for the brightest flavor. Chill the dough to prevent spreading and achieve the perfect crinkle top.
